Chicken & Mushroom Risotto
My father-in-law has had a rough time over the last month and, following 3 long weeks in hospital, he’s been discharged with strict instructions for a low fat diet. To give them a bit of culinary inspiration, I bought them the Hairy Dieters cookbook and tonight we rustled up the chicken & mushroom risotto. It was delicious! Full of flavour, wonderfully creamy and, what’s more, kind on the hips.
I’ve had a lot of trouble with risotto in the past finding it difficult to get a good balance of ingredients to produce a rich flavour. The addition of the dried wild mushooms in this recipe really pack a punch and the low fat cremé fraiche (as opposed to butter) adds a luxurious finish without piling on the pounds.
This book is well worth buying. It’s packed with so many ‘substantial ‘ meals, for which the Hairy Bikers are so well known, just with a healthier edge. I highly recommend – and for £5 on Amazon, you can’t go far wrong! Crispy chicken up tomorrow – yum!
